Every single class we review is personally attended by members of our team. We never rely on secondhand accounts, marketing materials, or promotional descriptions.

We book classes the same way regular travelers do, pay the full price (or clearly disclose when we don't), and experience everything exactly as you would, from booking process to final goodbye.

Our Scoring Criteria

We evaluate each cooking class across five key dimensions, scoring from 1-10. These scores are then weighted and combined to produce an overall rating out of 10.

Quality of Instruction

25% Weight

We evaluate the instructor's technical expertise, teaching ability, engagement with students, and respect for paella's cultural significance. Does the chef explain not just techniques but also traditions? Can they adapt to different skill levels? Do they create an environment where learning feels natural rather than forced?

We prioritize instructors who treat paella as a cultural ritual worthy of patience and respect, not merely as tourist entertainment.

Setting & Atmosphere

25% Weight

We assess the physical environment, ambiance, and how well the setting enhances the experience. This includes views, authenticity of location, cleanliness, equipment quality, and whether the atmosphere aligns with the class's stated goals.

A romantic rooftop class should deliver romantic atmosphere; a market-based class should provide authentic market immersion. We penalize misalignment between promise and reality.

Food Quality

20% Weight

We evaluate ingredient quality, the paella's final taste and texture, proper socarrat formation, and authenticity of preparation. Does the finished dish honor traditional paella standards? Are ingredients fresh and high-quality?

We recognize that authentic paella takes time—classes rushing the process to fit tight schedules typically score lower in this category.

Value for Money

15% Weight

We assess whether the price matches what's delivered. This isn't about "cheaper is better"—premium classes can score perfectly here if they deliver premium experiences. We consider duration, group size, what's included, and whether the experience justifies its cost.

A €177 rooftop class can score 10/10 on value if it delivers an exceptional romantic experience. A €70 market class can also score 10/10 if it delivers comprehensive education and cultural immersion.

Overall Experience

15% Weight

We evaluate the holistic experience: booking process, punctuality, organization, how well different elements work together, and whether the class honors paella's cultural significance. Would we recommend this to friends based on their specific preferences?

This is where we account for intangibles—the magic moments, the genuine connections, the sense that you've participated in something meaningful rather than merely consumed a tourist product.
